Farmer’s Fridge launched in October 2013 with the idea to create vending machines that served fresh, wholesome, hand-crafted salads, snacks and other foods, packed into well-designed, recyclable jars. The endeavor blends the talents of founder Luke Saunders, Culinary Director Jesse Szewczyk, formerly of Baker Miller. Bringing a culinary focus to grab-and-go foods, Farmer’s Fridge is now available at 40 different locations in Chicago and the surrounding areas, including hospitals, convenience stores, office buildings and more. At Revival, Farmer’s Fridge is able to expand their concept beyond the jar, using fresh fruits and vegetables—sourced directly from farmers, including the farmer’s market across the street—to create a wider range of healthy food prepared to order. The menu includes breakfast and lunch toasts, including a Lox Toast with Everything Bagel seasoning and a special Chicago-Style Avocado Toast, with smashed avocado and refined giardiniera. Popular salads such as the Shaved Vegetable and Kale Salad will be made to order. Unique house-made beverages include an Iced Brown Rice Horchata (vegan) and iced teas such as a Lychee Rose Iced Tea sweetened with raspberry jam and an Orange Blossom Iced Tea. Tying the new location to the original concept, an on-site Farmer’s Fridge vending machine will offer a selection of grab-and-go healthy options.
