A relative newcomer to the Chicago culinary scene, The Budlong launched this May in Lakeview, garnering immediate attention everywhere from the Chicago Tribune to the Chicago Reader to being named Time Out Chicago’s #1 Best Fried Chicken for its Nashville hot fried chicken. Now, The Budlong will be the first restaurant to occupy Revival Food Hall’s rotating pop-up stall, which will feature a new local, chef-driven restaurant every three months.

As the debut pop-up collaboration, owner and barbecue master Jared Leonard (Rogers Park’s Rub’s Backcountry Smokehouse) brings to The Loop a streamlined menu of Nashville hot fried chicken plates and sandwiches served on buttery brioche buns. The hormone and antibiotic free chicken is sourced locally, and comes in four different heat levels: naked, classic, medium and X-hot, which uses a blend of cayenne and habanero peppers. The Budlong offers 4-5 different side dishes, blending menu staples like potato salad, collard greens and flaky, buttery biscuits (made on-site) with a rotating roster of sides like elotes. House-made beverages, such as watermelon agua frescas and hibiscus ice tea round out the drink menu.
