Known for bringing their delicious, made-to-order classic sandwiches and sides to customers throughout the Chicagoland area, The Fat Shallot officially launched in May 2013 as the 5th food truck licensed for on-board cooking in Chicago, followed by The Fat Pickle truck in April of 2016. Before taking the leap to open their own food truck, Husband-and-wife team Sam Barron and Sarah Weitz graduated from Kendall College culinary school, with Sam going on to work in kitchens such as Chicago’s four-star Everest restaurant, Susan Spicer’s Bayona in New Orleans and Chicago’s Pump Room.
The Fat Shallot at Revival
The Fat Shallot at Revival will be the first brick and mortar location of their popular food truck concept, and will offer the greatest hits from both food trucks, presenting four sandwiches and one fresh salad daily. The lunch menu will include gourmet favorites such as the Shallot Turkey breast sandwich which includes avocado, arugula cucumber and basil aioli, Grilled Cheese with muenster cheese melted between slices of sourdough with sautéed spinach and caramelized onions, as well a Truffle BLT with bacon, arugula, tomato, avocado and truffle aioli on Texas toast. They will introduce breakfast offerings such as fresh bagels, house-cured salmon and veggies, with specialty drinks and shakes also making a new appearance.
