OUR STORY

Known for bringing their delicious, made-to-order classic sandwiches and sides to customers throughout the Chicagoland area, and being named by the Chicago Reader as the best food truck in the city of Chicago in 2017, The Fat Shallot officially launched in May 2013 as one of the first food trucks licensed for on-board cooking in Chicago. Their second truck followed in April of 2016. Before taking the leap to open their own food truck, husband-and-wife team Sam Barron and Sarah Weitz graduated from Kendall College culinary school, with Sarah continuing to work full time as an RD and working for a small catering company on the side. Sam went on to work in kitchens such as Chicago’s Everest restaurant, a three-Michelin-starred restaurant in Spain, and a year at Bayona in New Orleans.

The Fat Shallot at Revival Food Hall

The Fat Shallot at Revival is the first brick-and-mortar location of their popular food truck concept and offers some of the greatest hits from the two trucks. The location presents four classic sandwiches, house-made soups, and fresh salads with specialty drinks and milkshakes making an appearance daily. The lunch menu includes gourmet favorites such as The Fat Shallot Turkey breast sandwich with avocado, arugula, cucumber, and basil aioli; Grilled Cheese with muenster cheese melted between slices of rustic sourdough with sautéed spinach and caramelized onions, and The Fat Shallot Shrimp with jumbo shrimp, spicy sesame aioli, Bibb lettuce, and pickled red onions on brioche. Add a jumbo dill pickle, a Fat Shallot chocolate chip cookie, or a bag of kettle chips for the perfect complement to your classic sandwich.
